The Package Principle.

Whole foods don’t have ingredient lists because they are the ingredient. An apple doesn’t need a label explaining what’s in it. A chicken breast is just chicken. Eggs are eggs.

When food needs a package with a nutrition label and ingredient list, something has been done to it:

  • Processed and recombined
  • Preserved for shelf stability
  • Enhanced for flavor or texture
  • Designed by food scientists, not evolved by nature

Some packaged foods are fine — frozen vegetables, canned beans, plain nuts. But many represent the industrial transformation of food into food products optimized for profit, not health.

The Audit.

Pull out your receipt from your last grocery trip, or examine what’s in your refrigerator and pantry that you recently purchased.

Category 1: No package or simple packaging

  • Fresh fruits and vegetables
  • Meat, poultry, fish (from the butcher counter or simple packaging)
  • Eggs
  • Plain dairy (milk, cheese, butter without additives)
  • Bulk nuts, beans, grains

Category 2: Minimal processing, straightforward packaging

  • Frozen vegetables (ingredient list: vegetables)
  • Canned beans (ingredient list: beans, water, salt)
  • Plain yogurt (ingredient list: milk, cultures)
  • Olive oil, vinegar

Category 3: Processed foods with added ingredients

  • Bread with preservatives
  • Sauces with added sugar
  • Cereals with multiple ingredients
  • Flavored yogurts
  • Packaged snacks

Category 4: Highly processed products

  • Chips, crackers, cookies
  • Frozen meals
  • Sodas and sweetened beverages
  • Anything with ingredients you can’t pronounce

What’s the ratio? If Category 3 and 4 dominate, your grocery cart is mostly industrial food products.

Why This Matters.

It is not just the nutrients, and this was tested. In a randomized crossover trial that separated them, people ate 508 kcal a day more on an ultra-processed diet than on a nutrient-matched unprocessed one.[1] Eating rate ran 17 kcal a minute faster on the processed food, and that rate correlated with the excess — softer textures and higher energy density let consumption outpace the satiety signal.[1]

And it was not that they liked it more. Both diets were rated equally pleasant and satisfying despite the 508 kcal gap, and participants reported no difference in hunger or fullness.[1] On the unprocessed diet the appetite hormones moved as they should — PYY up, ghrelin down; on the ultra-processed diet neither did.[2]

Ingredient exposure. The NOVA classification names what to look for rather than leaving it to intuition: high-fructose corn syrup, hydrogenated or interesterified oils, hydrolyzed proteins, soy protein isolate and mechanically separated meat, plus cosmetic additives — flavors, flavor enhancers, colors, emulsifiers, sweeteners, thickeners.[1]

The Shopping Shift.

If your cart is package-heavy, the fix happens at the grocery store:

Shop the perimeter. In most stores, whole foods (produce, meat, dairy) are on the perimeter. Packaged foods fill the center aisles. Spend most of your time and money on the perimeter.

Read ingredient lists. If you buy something packaged, check the list. Fewer ingredients is generally better. Recognizable ingredients are better than chemical names.

Question the convenience. Packaged foods offer convenience. But convenience often comes at the cost of nutrition and satiety. Is washing vegetables really that inconvenient compared to opening a bag of chips?

Plan meals around whole foods. Decide what whole foods you’ll eat this week, then shop for those. Don’t browse the packaged goods section looking for inspiration.

The Realistic Middle.

Perfect whole-food eating is difficult in modern life. Some packaged foods are practical and acceptable:

  • Frozen vegetables are fine
  • Plain canned goods are fine
  • Simple condiments are fine

The goal isn’t zero packages. It’s recognizing that the balance has likely drifted too far toward industrial food products, and shifting it back toward actual food.
