What the evidence says
- Three quantitative clusters define hyper-palatable foods: fat+sodium (>25% kcal fat, ≥0.30% sodium), fat+sugar (>20% kcal each), carbs+sodium (>40% kcal carbs, ≥0.20% sodium)[1]
- These combinations are rare in whole and unprocessed foods and ubiquitous in processed products; they overstimulate reward pathways and suppress satiety signals[1]
- 62% of the 7,757 foods in the USDA FNDDS met hyper-palatable criteria — the norm in the US food supply, not the exception[1]
- Fat+sodium is the most common cluster — *70% of HPF items (3,351/4,795) — then fat+sugar 25% (1,176/4,795), then carbs+sodium 16% (747/4,795)*. The clusters are largely distinct: fewer than 10% of HPF items meet more than one[1]
- *49% of items labeled "reduced or no" fat, sugar, salt or calorie still qualify as hyper-palatable (216/443) — and for the reduced-fat or reduced-calorie subset specifically it is 80% (102/127). Those items are only 5% of all HPF identified (216/4,795)*, so it is a real labelling gap and a small share of the problem[1]
- *Hyper-palatable is not a synonym for calorie-dense: 49% of HPF items had low* energy density (< 2 kcal/g), and the range runs from under 1.0 kcal/g to 8.4 kcal/g[1]
- Rare in whole foods, ubiquitous in processed products[1]
- Hyperpalatable foods drive "conditioned hypereating" — repeated exposure creates dopamine-mediated compulsive eating triggered by food cues (sight, smell, thought of food) before eating even begins[2]
- The "bliss point" is the precise amount of sugar that maximizes pleasure — food companies employ scientists to calculate it for each product; for fat there is no bliss point, so it can be added without limit[3]
