How protein affects insulin differently than carbohydrates.
What the evidence says
- Protein-rich foods stimulate significant insulin release despite low/no carbohydrate content: beef scored GS 21 but IS 51, fish GS 28 but IS 59 — insulin response 2–2.4× what blood sugar alone would predict[1]
- Eggs are an exception among protein-rich foods: IS 31 was actually lower than their GS 42[1]
- Protein + carbs together produces synergistically higher insulin than either alone: combined insulin area (247 µU·h/ml) exceeded the sum of individual responses (97 + 83 = 180), not merely additive[2]
- When protein given with glucose, insulin response was ~2.5x higher than glucose alone — and the enhanced insulin reduced plasma glucose rise by 34%[2]
- Protein alone keeps blood glucose stable for ~2 hours (no spike and crash like carbs)[2]
- Protein also triggers glucagon, which partially counterbalances insulin's blood sugar lowering effect[3]
- Different proteins vary in insulinogenic effect — whey protein is particularly insulinogenic, producing 90% higher insulin AUC than a bread reference despite 57% lower glucose AUC; the effect correlates with early rises in leucine, valine, lysine, and isoleucine, and with GIP incretin release (+54%)[4]
- Dairy-heavy low-carb eating may still produce significant insulin responses because the insulinotropic effect of milk proteins operates partly through amino acids and incretin hormones, not just blood glucose[4]
