Why we cite it
A review of how ambience, the social and physical surroundings in which eating takes place, affects food intake and food choice. It reports changes in intake with the number of people present, food accessibility, eating location, food color, ambient temperature and lighting, the temperature and smell of food, time of consumption and ambient sound. The authors conclude that the magnitude of the effect of ambience ”may be underestimated”, that ambient factors might be manipulated ”therapeutically to alter food intake”, and that nutrition-related research needs to pay more attention to ambience.
