About the author
Joanne L. Slavin is a Professor in the Department of Food Science and Nutrition at the University of Minnesota, Twin Cities (BS, MS, PhD in Nutritional Sciences from University of Wisconsin-Madison; registered dietitian). She has authored over 350 scientific articles on dietary fiber, carbohydrates, whole grains, protein, and gut health, and has given over 350 invited lectures worldwide. She served on the 2010 Dietary Guidelines Advisory Committee and delivered the 2015 W.O. Atwater Memorial Lecture at the American Society for Nutrition meeting. She is a member of the Institute of Food Technologists, the Academy of Nutrition and Dietetics, and the American Society for Nutrition.
