Book

Nosrat S. Salt Fat Acid Heat: Mastering the Elements of Good Cooking. New York: Simon & Schuster; 2017. 480 p. Illustrated by Wendy MacNaughton.

Why we cite it

A principle-based cookbook that reduces good cooking to four universal elements — salt (enhances flavor), fat (delivers flavor and texture), acid (balances flavor), heat (transforms texture). Teaches intuitive cooking rather than recipe-following, showing that mastering these elements allows confident cooking with any ingredients. Relevant to the project’s emphasis on building cooking competence as a foundation for healthy eating — technique over restriction.
